Step 1: Make the Shortbread Dough
- Beat softened butter and sugar for 2–3 minutes until light and creamy.
- Add vanilla, then mix in flour and salt until the dough forms soft clumps.
- Chill dough 20 minutes for best shape and texture.
Step 2: Scoop & Bake the Cookies
- Preheat oven to 350°F (175°C).
- Line baking sheets with parchment.
- Scoop 1–1½ tablespoon dough balls.
- Flatten slightly with your palm or the bottom of a glass.
- Bake 10–12 minutes, until edges are lightly golden.
- Cool completely.
Step 3: Make the Caramel Layer
- In a small saucepan, melt:

- heavy cream
- Stir constantly until smooth.
- Spoon 1–2 teaspoons of warm caramel onto each cookie.
- Let caramel set 10–15 minutes before adding chocolate.
Step 4: Add Chocolate Topping
- Melt chocolate chips (and optional coconut oil) in the microwave in 20-second intervals.
- Spoon chocolate over the caramel, spreading gently to cover the top.
- Optionally sprinkle with:
