Step 1: Mix Dry Ingredients

Step 4: Roll & Bake
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment.

- Scoop dough into 1–2 tablespoon balls and roll in cocoa-sugar mixture.
- Space 2 inches apart on baking sheet.
- Bake 9–11 minutes, until edges are set but centers look soft.
- Cool on tray for 10 minutes before moving.

- Beat mascarpone, cream, powdered sugar, vanilla, and espresso powder until fluffy and smooth.
- Do not overmix — mascarpone can become runny.
Step 6: Assemble
