Step 1: Prepare the Egg Yolks
- In a bowl, whisk together:
- egg yolks
- milk
- vanilla
- Sift in the flour and baking powder.
- Mix until smooth and thick (like cake batter).
- Set aside.
Step 2: Whip the Egg Whites
- Using a clean bowl, beat egg whites on medium speed until foamy.
- Add sugar 1 tablespoon at a time, beating between additions.
- Continue whipping until glossy, stiff peaks form — the key to soufflé rise.
Step 3: Fold the Batter
- Gently fold ⅓ of the egg whites into the yolk batter to lighten it.
- Add remaining egg whites and fold VERY gently using a spatula.
- Do not stir — keep as much air in the batter as possible.
Step 4: Preheat the Pan
- Heat a nonstick skillet over low heat.
- Lightly oil the surface.
- If using ring molds, grease the inside and place them on the pan.
Step 5: Cook the Pancakes
- Scoop batter into 2–3 tall mounds or fill the ring molds halfway.
- Add 1 tablespoon of water to the empty area of the skillet and cover with a lid — the steam helps them rise.
- Cook 4–5 minutes, then gently add a little more batter on top to build height.
- Cook another 4–5 minutes, flip gently, and cook 3–4 minutes on the other side.
- Pancakes should be tall, golden, and jiggly.
Step 6: Serve Immediately
- Soufflé pancakes deflate slightly as they cool — serve hot off the pan.
- Top with:
- powdered sugar
